Ingredients

11⁄2 cups all-purpose flour

1 Tbsp baking powder

1⁄2 cup Truvía® Baking Blend

1⁄4 tsp salt

1 cup skim milk

1 large egg

1⁄3 cup canola oil

1⁄2 tsp vanilla extract

3⁄4 cup blueberries; fresh or frozen

 

 

Directions

  1. Assemble all ingredients; preheat oven to 400°F.
  2. Combine flour, baking powder, Truvía® Baking Blend and salt in a medium bowl.
  3. Combine milk, egg, oil and vanilla in a large bowl. Mix until well combined.
  4. Add dry ingredients to egg mixture. Mix until just combined. Do not over mix.
  5. Fold in blueberries.
  6. Divide batter into twelve 21⁄2inch paper-lined muffin cups.
  7. Bake for 18–22 minutes until tops are lightly browned.
  • This muffin has 160 calories and 7 grams of sugar per serving, compared to the full-sugar version that has 190 calories and 19 grams of sugar per serving.
